In India, "sugar free" is used as a generic term, but the three main variants are chemically different products. Gold is aspartame. Natura is sucralose. Green is stevia. That distinction matters more than the packaging suggests.

The single most useful thing to know is this: aspartame is not heat stable. It begins to break down at cooking temperatures and loses its sweetness. If you stir Sugar Free Gold into a kheer or use it in baking, the result will be far less sweet than expected, and adding more will not fix it.

Sucralose and stevia both survive heat. For anything you cook, those are the ones to reach for. For tea, coffee, lassi or anything cold, all three work identically.

ADI means acceptable daily intake — the amount considered safe to consume every day for life. Because these sweeteners are 200 to 600 times sweeter than sugar, the quantities involved are tiny. A 70kg adult would have to consume an implausible amount of any of them in a day to approach the limit.

Stevia vs Sugar — Is Stevia Actually Better?

For blood glucose, clearly yes. For weight loss, the evidence is far weaker than the marketing suggests.

What stevia is

Stevia comes from the leaves of Stevia rebaudiana, a South American plant. The sweetness comes from compounds called steviol glycosides, which are extracted and purified. They are roughly 250 times sweeter than sugar, pass through the body without being metabolised for energy, and contribute effectively no calories.

Because nothing digestible is absorbed, stevia does not raise blood glucose. For anyone tracking blood sugar, that is a genuine and meaningful advantage over sugar, jaggery, honey and every other caloric sweetener.

Where the claims get overstated

Stevia is frequently marketed as a weight-loss aid. In 2023 the WHO issued a guideline advising that non-sugar sweeteners should not be used as a means of achieving weight control or reducing the risk of noncommunicable disease. The review behind it found no long-term benefit for body fat in adults or children.

Three qualifications matter, and most articles omit them. First, this was a conditional recommendation based on low-certainty evidence, not a strong one. Second, it is not a safety warning — these sweeteners remain approved and within their safety limits. Third, the recommendation explicitly excludes people with pre-existing diabetes.

The guideline has also been publicly contested by nutrition researchers who argue it gave undue weight to observational studies over controlled trials. The reasonable reading is that swapping sugar for stevia is not a weight-loss strategy on its own, but it is not harmful either.

The practical downside

Stevia has a distinctive liquorice-like bitterness on the finish that many people dislike, particularly in tea. It is the most common reason people try stevia and go back. If aftertaste is the deciding factor for you, sucralose is the more neutral option.

Pick sucralose if taste neutrality matters most — it is the closest to sugar in flavour and works in tea, coffee and most cooking.

Pick stevia if you prefer a plant-derived option and can tolerate the aftertaste, or if you are cooking at high temperatures where sucralose is less suitable.

Neither choice will meaningfully change your health outcomes compared to the other. The difference between them is far smaller than the difference between using either one and continuing with sugar.

Stevia vs Aspartame — Natural vs Synthetic

This is the comparison people most often frame as natural versus artificial. The distinction is real but less decisive than it sounds.

Aspartame is a compound of two amino acids, aspartic acid and phenylalanine, both of which occur naturally in protein foods. It is roughly 200 times sweeter than sugar. Its ADI of 40 mg per kg of body weight is generous — a 70kg adult would need to consume more than nine to fourteen cans of diet soft drink daily to exceed it.

Two genuine limitations apply to aspartame and not to stevia:

  • It cannot be heated. Aspartame degrades at cooking temperature and loses sweetness. Stevia is fully heat stable.
  • It is unsafe for people with phenylketonuria (PKU), a rare inherited disorder in which phenylalanine cannot be metabolised. Products containing aspartame must carry a warning. Stevia carries no such restriction.

In 2023, the IARC classified aspartame as possibly carcinogenic to humans (Group 2B) on limited evidence. In the same week, the WHO and FAO expert committee on food additives reviewed the same evidence and left the acceptable daily intake unchanged, and the US FDA stated publicly that it disagreed with the IARC conclusion. Group 2B is a broad category that also contains aloe vera extract and pickled vegetables.

The reasonable position: aspartame at normal intake is not a health risk for most people, but stevia avoids the PKU issue and the heat problem entirely, which makes it the more flexible choice.

Stevia vs Jaggery — Two Different Arguments

These are often placed side by side as the two "natural" options, but they behave nothing alike.

Stevia is plant-derived and contributes no calories and no glucose. Jaggery is plant-derived and contributes 383 calories per 100g with a glycemic index of around 84 — higher than white sugar. If your goal is blood sugar control or calorie reduction, stevia wins comprehensively.

Jaggery's argument is different: it carries trace iron, potassium and magnesium that stevia does not, and it contributes flavour that a sweetener cannot replicate. In a til laddoo or a chikki, jaggery is an ingredient, not just a sweetener.

So the practical answer depends on the use. For daily tea, if you are managing blood sugar or weight, stevia is the better option. For traditional cooking where jaggery is part of the dish, use jaggery and count it inside your daily sugar allowance.

Sugar Free Gold Side Effects — What Is Real and What Is Not

For most people at normal intake, none. Aspartame, the sweetener in Sugar Free Gold, is among the most extensively studied food additives in existence, and decades of review have not established harm at ordinary consumption levels.

That said, three things are worth knowing, and they are the ones that actually matter rather than the ones that circulate on social media.

1. Phenylketonuria — a genuine contraindication

Aspartame contains phenylalanine. People with phenylketonuria (PKU), a rare inherited metabolic disorder, cannot process it and must avoid aspartame entirely. This is why packaging carries a phenylalanine warning. PKU is usually identified in newborn screening, so most people affected already know.

2. Reported effects in sensitive individuals

A minority of people report headaches or digestive discomfort with aspartame. Controlled studies have generally not reproduced these effects consistently, but individual sensitivity cannot be ruled out. If you notice a pattern, switching to sucralose or stevia is straightforward and costs nothing.

3. The 2023 IARC classification

In July 2023 the IARC placed aspartame in Group 2B, possibly carcinogenic to humans, citing limited evidence relating to liver cancer. This generated substantial headlines. What received less attention: the WHO and FAO expert committee reviewed the same body of evidence simultaneously and concluded there was no reason to change the acceptable daily intake, and the US FDA stated it disagreed with the IARC finding.

Group 2B is a wide category. It also includes aloe vera extract and pickled vegetables. An IARC classification describes whether something could cause cancer under some circumstances, not how likely it is at the doses people actually consume.

The proportionate view

If aspartame worries you, switching to sucralose or stevia takes one trip to the shop and resolves it. What is not worth doing is going back to sugar out of concern about sweeteners — the evidence linking high free-sugar intake to obesity and type 2 diabetes is vastly stronger than anything against aspartame at normal use.

The part that matters more than the choice

Switching from sugar to a sweetener addresses only the sugar you add yourself. In a typical Indian diet, most of the glucose load comes from elsewhere — rice, roti, potato, packaged snacks and sweetened drinks. Two teaspoons of sugar in your chai is around 8 grams.
